Caprese Pasta

You guys, I’ve been meaning to post this recipe for MONTHS, and here it is! I made this recipe up and it’s probably my favorite ever! Recently, I have been adding pancetta for some extra flavor and it’s delicious- obviously this part is completely optional!

Caprese Pasta

Serves 2

Ingredients:

10 oz Banza Pasta (or any bean pasta)

Cherry Tomatoes (cut into halves)

Mozzarella Balls (cut into halves)

Avocado (use 1/2 for each serving)

Pancetta (optional)

Trader Joes Garlic Olive Oil

Balsamic Glaze

Directions:

  1. Boil Pasta per package directions
  2. In a separate pan on low heat (optional- cook pancetta), add in tomatoes and a few turns of garlic olive oil
  3. Drain pasta and put it in the pan with the tomatoes and olive oil
  4. let it cook together for no more than 5 minutes
  5. Take pan off heat and add in mozzarella balls
  6. Give it a quick mix and plate immediately
  7. Add half an avocado to each plate and drizzle with balsamic glaze

(Note: if you want to eat this cold, just transfer the pasta directly back into the to the pot it was originally in and add the olive oil, tomatoes, and mozzarella balls all at once, stir to mix all the ingredients together, and top with avocado and balsamic glaze!)
