Best Friend came over last week and we made crepes for lunch. We used to make them all of the time a few years ago… They’re SO good!
I got the recipe from from mom’s Weight Watchers Cookbook, but i’ll reproduce it here for your convenience š
INGREDIENTS:
1/2 cup all purpose flour
1/4 tsp salt
1/2 tsp ground nutmeg (we used cinnamon)
1 cup fat free milk
2 large eggs lightly beaten
Fruit ( we used strawberries and bananas (and powdered sugar)
DIRECTIONS:
Combine the flour, salt, nutmeg/cinnamon in a medium bowl. In another bowl, combine the eggs and milk. Whisk the milk mixture slowly into the dry ingredients until smooth. Let stand for 15 minutes.
Coat an 8 in non-stick skillet with cooking spray and heat until hot (I used medium heat).
Stir the batter, and using a 1/4 cup mixing cup, pour the batter into the skillet and tilt it in all directions to coat the skillet. It will be very thin. Cook for about 1 1/2 minutes on one side then about 15-20 seconds on the other side.
Start the process over with each crepe. We made about 8 from this recipe.
You can fill your crepe with anything you want, we always made our crepes with fruit so thats what we did š
