Happy Thursday, folks! Oh what a gorgeous spring day it is outside… NOT!
Made this for lunch yesterday, it hit the spot!
This Quinoa dish with pears, strawberries, blackberries, and dried cranberries in a lemon sugar “sauce” is a great spring or summer time snack or light meal! I made too much so guess what I’m having for lunch today!
Ingredients:
One cup Quinoa
Fruit of choice (I used strawberries, blackberries, a pear and dried cranberries)
One lemon
Half teaspoon Sugar (more or less as desired)
Directions:
Cook quinoa per package directions, let it cool for about half hour
In the meantime, cut up the fruit
Prepare the “sauce” : squeeze juice of one lemon (about a tablespoon or two depending on preference) add sugar and stir until combined.
Once quinoa has cooled, add fruit and “sauce” and stir until combined..
ENJOY!
Nutrition Note: Quinoa is a grain that is high in fiber and protein. It can be a great substitute for rice or pasta as a side.
